As he matured and his expertise grew, he moved to the bright lights of London where he gained essential Michelin star experience, before eventually finding the lure of home too much and returning to Glasgow to continue his journey as a chef of exceptional skill. This is evident in the wholesome, traditional yet epic roasts for which he is becoming renowned.
