Get the First Look Inside Glasgow’s New Dishoom

Mid-century Bombay style meets a playful 1950s spy backstory — plus a Glasgow-exclusive Rob Roy at the Permit Room bar.

Dishoom will open the doors of its new Glasgow café on Friday 29 August inside the 1877 Glasgow Stock Exchange. Spanning 6,720 sq ft, the city-centre space offers a striking mix of design, storytelling and hospitality. Interiors riff on a fictional 1950s Bombay spy laying low in Glasgow — a thread that runs through coded sign-writing and even Morse code hidden in the house rules.

Design notes

Created with long-term collaborators Macaulay Sinclair, the look channels the post-independence art scene of mid-century Bombay and the influential Bombay Progressives (formed in 1947). Expect a rich hardwood bar finished with aged brass, a bespoke marble floor, and a custom double-sided clock set within a glazed screen that subtly divides bar and dining spaces.

Guests will notice geometric terrazzo meeting vintage parquet underfoot; polished plaster walls in verdant greens and soft pinks offset by exposed concrete ceilings; and a considered mix of vintage light fittings sourced from Bombay alongside bespoke UK-made fixtures. Three abstract canvases and a mural painted directly onto an exposed concrete column add a gallery-like note, while fabric-topped tables, custom laminate and marble with hardwood edging bring warmth. A mid-century, pavilion-inspired owners’ desk greets guests on arrival.

Eat & drink

At the Permit Room bar, look for a Glasgow-exclusive twist on the classic Rob Roy: butter-oat fat-washed whisky, sweet vermouth and a house-made currant & sultana liqueur. As ever, the bar balances cocktails with an ample menu of teetotal tipples.

Giving back

Every meal enjoyed at Dishoom gives a meal to a child who might otherwise go without through the brand’s Meal for a Meal initiative. Working with Magic Breakfast in the UK and The Akshaya Patra Foundation in India, the programme has gifted over 20 million meals to date, with more to come.
