Executive Head Chef James Mearing and his team draw inspiration from the Cromlix estate and Scotland’s outstanding network of artisan producers, creating an ever-evolving tasting menu shaped by what is growing, foraged and in season. Ingredients are gathered from the hotel’s Kitchen Garden and surrounding grounds before being transformed into refined, thoughtful dishes that celebrate the Scottish landscape in its purest form.

And what arrives at the table feels every bit as elegant and immersive as the surroundings themselves.

The current menu begins with aged mackerel paired with garden rhubarb and dill before moving into delicate white asparagus dressed with hazelnut oil and luxurious N25 Oscietra caviar. Denhead Farm Scottish asparagus is elevated with summer truffle and garden peas, while hand-dived West Coast scallops arrive with guanciale and sharp notes of verjus.

There is comfort woven through the refinement too, from glazed milk bread served warm with Blackthorn salted butter to an indulgent Isle of Mull Cheddar Royale course that feels unapologetically decadent.

Later courses celebrate some of Scotland’s finest produce, including North Coast turbot with Shetland mussels and Naughton Farm cider, before Scottish Borders lamb saddle is served with Jersey Royals and garden alliums freshly gathered from the estate.

Dessert is equally evocative of the season, with Scottish strawberries paired with Cromlix honey and fragrant Kampot pepper.

A thoughtfully crafted vegetarian equivalent is also available, featuring dishes such as salt-baked kohlrabi with garden rhubarb and dill, BBQ hen of the woods with salsa verde and verjus, and artichoke with turnip and Naughton Farm cider.

The tasting menu is priced at £150, with optional wine pairing at £95.

Cradle forms part of a major redevelopment at Cromlix, which closed its doors in January for an extensive transformation and has now officially reopened with a series of beautifully designed new spaces.
