The Harbour Smoke: A Scottish Twist on a Classic
Elegant yet approachable, The Harbour Smoke is a new cocktail created to celebrate a milestone moment for the Isle of Harris Distillery. To mark ten years – and the release of The Hearach Decade Edition the first-ever whisky made using peat hand-cut from the island – the distillery has teamed up with Glasgow bartender David Anderson of Glasgow’s Five March, who also runs the popular mixology Instagram @home_sweet_spirits, to craft a signature serve.
Inspired by the classic Revolver, Anderson’s Harbour Smoke captures the distillery’s island character in liquid form – quiet smoke, layered spice and just a touch of sweetness.
“The Harbour Smoke is a cocktail I created inspired by the Revolver cocktail with a Scottish twist. It’s a really great way for people to enjoy a whisky for the first time. It takes the traditional Scottish character of peat instead of Bourbon’s sweetness, however, by adding a small splash of sherry, it balances out. Pair that with a great coffee liqueur and some bitters then you’ve got a great Scottish expression showing off the wonderful liquid from Hearach.” – David Anderson
The result is a sophisticated yet welcoming cocktail that brings out the smoky, spiced notes of The Hearach Decade Edition, while nodding to the distillery’s Hebridean roots.
The Harbour Smoke Recipe
Ingredients
20ml Coffee liqueur
5ml PX sherry
2 dashes Angostura bitters
Garnish: orange twist
Method
Add all ingredients to a mixing glass filled with ice.
Stir until well chilled and diluted.
Strain into a chilled martini glass.
Express the oils of an orange twist over the surface, then drop in to garnish.
